Enzymes in the muscles contribute to breakdown. Some so called fresh seafood develops toxins if left in the sun too long, or if it hasn’t been transported with proper refrigeration. Eating these toxins can lead to serious illness.

Buying flash frozen or frozen fish often guarantees that you get better tasting and better quality protein. These fish have been frozen immediately on the fishing boat. Fresh fish, on the other hand often lies out on ice in the hold of the boat for hours if not days before arriving at port. Don’t be fooled by the label. Premium fresh-frozen seafood is as good if not better, most of the time.
